First, scrape away all the fish scales, internal organs and wash thoroughly.
Wash tomatoes and cut them into thick slices.
Cut the onion into strips
Wash the celery and cut it into pieces.
Put 1 tbsp of oil into the wok on medium heat then add the ginger to fry. Add a bit of salt onto the yellow croaker and fry both sides. Then put it on the dish.
In the same wok, fry the onion and add tomato sauce, ketchup, basil, tomato and Chinese celery. Stir well and add 2 tbsp of hot water. Put the lid on for about one minute. Then put the yellow croaker on the wok for about one minute. Serve.
