Stir Fry Water Spinach with Sole Garlic (獨子蒜腐乳炒通菜)

Ingredients
  

  • 770 g water spinach
  • 6 sole garlic
  • 3 shallots
  • 2 chili
  • 4 bean curd in chile oil
  • 3 slices ginger
  • 3 tbsp Shao Xing cooking wine

Instructions
 

  • Wash water spinach and separate them into portions by hand.
  • Peel off garlic and shallots and cut them into slices.
  • Cut the ginger into strips
  • Mix bean curd in chili oil and Shao Xing cooking wine together.
  • Cut the chili into pieces.
  • Put 4 tbsp of oil in the wok on low heat. Add garlic and fry them until golden. Put them on the dish. Leave the oil in the wok.
  • Add shallots, ginger and chili and fry them on low heat .
  • Turn to high heat. Add water spinach and bean curd in chili oil. Mix them together until water spinach is cooked.
  • Turn off the heat and add the cooked garlic. Serve.

Notes

1. Flatten the stem of water spinach when you wash them. It will create a stronger taste.
We have to use high heat to fry water spinach otherwise the spinach becomes black.
