Wash water spinach and separate them into portions by hand.
Peel off garlic and shallots and cut them into slices.
Cut the ginger into strips
Mix bean curd in chili oil and Shao Xing cooking wine together.
Cut the chili into pieces.
Put 4 tbsp of oil in the wok on low heat. Add garlic and fry them until golden. Put them on the dish. Leave the oil in the wok.
Add shallots, ginger and chili and fry them on low heat .
Turn to high heat. Add water spinach and bean curd in chili oil. Mix them together until water spinach is cooked.
Turn off the heat and add the cooked garlic. Serve.
Notes
1. Flatten the stem of water spinach when you wash them. It will create a stronger taste.
We have to use high heat to fry water spinach otherwise the spinach becomes black.
