Roasted Pork Bone with Fuzzy Melon Soup (節瓜燒豬骨湯)

Ingredients
  

  • 1024 g fuzzy melon
  • 2 roasted pork bones
  • 200 g red peanut
  • 20 g ginger
  • 2 L water

Instructions
 

  • Scrape off the skin of the fuzzy melon by a small knife then wash them. Cut them into big pieces.
  • Cut away burnt parts of the roasted pork bone. Wash them with warm water and dry them up later.
  • Wash the ginger and flatten with the skin
  • Wash the red peanuts and immerse them in water. Put them in the fridge overnight.
  • Put 2 liters of water, ginger, red peanuts with water and roasted pork bone in the pot. Boil them on high heat for about 15 minutes and add the fuzzy melon. Boil them on low heat for about 45 minutes. Taste it and add salt. Serve.

Notes

1. We can buy roasted pork bones in asian butcher shops. Remember to cut away those burnt portions of roasted pork bone to avoid burnt flavours
2. The taste of roasted pork bones are different so we have to taste the soup first before adding salt.
