Pumpkin Soup Recipe( 簡易南瓜湯 )

Ingredients
  

  • 1 pumpkin
  • 2 leeks
  • 2 small carrots
  • 1 onion (medium size)
  • 3 to 4 cloves of garlic
  • 1 tbsp butter
  • 1500 ml hot water
  • 3 to 4 slices ginger

Instructions
 

  • First, peel off the skin and remove the pulp inside of the pumpkin. Cut it into slices.
  • Cut and remove the root of the leek and cut it into pieces.
  • Peel off the skin of garlic, ginger,onions and carrots. Cut all of them into slices.
  • Put butter, ginger, garlic and onion with 1 tbsp of oil in the wok using medium heat.
  • Then fry pumpkin, carrot, leeks and black pepper together.
  • After frying, boil hot water for about 20 minutes and mix them with a blender.
  • Sprinkle some salt in and serve.

Notes

  1.  Adding some cream on the top of the soup is optional ,but creates a more creamy texture
