Pork Tongue (鹵水豬脷....大吉大利)

Ingredients
  

  • 3 pork tongues
  • 4 eggs
  • 15 g ginger
  • 2 tbsp cooking wine
  • SAUCE INGREDIENTS
  • 10 pcs of cloves
  • 2 bay leaves
  • 3 star anise
  • 1 tangerine skin
  • 2 cloves of garlic
  • 10 g ginger
  • 1 cup soy sauce
  • 1 tbsp dark soy sauce
  • 5 cups water
  • 15 g rock sugar
  • 2 tbsp cooking wine
  • 1 cinnamon stick

Instructions
 

  • First, boil eggs. After, peel off the egg’s shell.
  • Next, wash pork tongue. Add ginger slices, cooking wine and pork tongue into boiling water in the pot for about 20 to 25 minutes on low heat. Then pour off the water and scrap off the outer skin of the pork tongue and wash it again.
  • Pour all the marinade sauce into the pot and boil them with high heat. After it boils, add pork tongue into the pot and boil for about 45 minutes on low heat. Then put the cooked egg inside and boil for about 5 minutes. Then turn off the heat and cut the egg in half and pork tongue into slices. Serve.

Notes

  1. This can be served with mustard.
  2.  After cooking, you can put pork tongue and egg into marinade sauce overnight for a stronger taste.
  3. You can drain out the ingredients from marinade sauce after cooking and put in the refrigerator to reuse.
