Pig feet (醉豬手....橫財就手)

Ingredients
  

  • 3 lb pig feet
  • 56 g goji berry
  • 410 ml drunken chicken marinade sauce
  • 1 cup cooking wine
  • ½ cup of water

Boiling Ingredients

  • 1 bay leaf
  • 2 star anise
  • 20 g ginger
  • 1 clove of garlic
  • 2 green onions
  • 10 g crystal sugar
  • 1 hot pepper

Instructions
 

  • Clean the pig feet and pluck out the remaining hairs.
  • Put the pig feet in the pot and add water until it covers the pig feet completely. Then add the prepared boiling ingredients into the pot. Turn on high heat and switch to low heat after boiling for about one hour. Test the softness of the pig hands using chopsticks.
  • Prepare one pot of ice water. After boiling the pig feet (pig hand becomes soft), rinse pig feet and put them into ice water immediately. Pat pig feet dry to prevent diluting later.
  • Add water and cooking wine in a pot and bring it to a boil. Then , add goji berry and drunken chicken marinade. Let it cool and put in the pig feet.
  • Put the pig feet into the sauce and place it in the fridge overnight. Serve the next day.

Notes

Make sure that the sauce is well mixed with the pig feet and remember to serve after placing it over night. This will allow the pig feet to soak in all the tasty goodness from the sauce.
Don't over boil to prevent the cooking wine from evaporating.
