Oyster Pancake (煎蠔餅)

Ingredients
  

  • 600 g frozen cooked oyster meat
  • 2 duck eggs
  • 1 bundle chinese coriander
  • 1 tbsp fish sauce
  • ½ tsp sugar
  • 1 tsp white pepper
  • 3 tbsp sweet potato starch
  • 1 tbsp potato starch
  • 3 tbsp water
  • ½ stick green onion

Instructions
 

  • First, use salt water to defrost the oysters. Then use 2 tbsp flour to clean the oysters and rinse it with water. You have to clean up again with warm water in 10 seconds. Dry them up thoroughly with a paper towel.
  • Stir duck eggs evenly.
  • Cut coriander and green onion into pieces.
  • Mix sweet potato starch, potato starch and water , stir well. Then add all the rest of the ingredients and mix them evenly.
  • Add 1 tsp of oil to fry each mixture portion with medium heat until both sides are golden. The mixture can be separated 6 times to fry.
  • Mix 2 tbsp of fish sauce and 1 tbsp of water on the side as a dipping sauce. Serve

Notes

1.Separating the mixture into portions will ease the frying process.
2.Pay more attention to cleaning and removing all the oyster’s shell.
