Octopus Lotus Root Soup (蓮藕章魚湯....年年好運有)

Ingredients
  

  • 603 g lotus root
  • 80 g dried octopus
  • 3 dried dates
  • 80 g green beans
  • 6 mushrooms
  • 2 carrots
  • 1.62 kg pork bones
  • 4.5 L water

Instructions
 

  • First, soak green beans, mushrooms and dried octopus until they become soft.
  • After soaking, cut dried octopus into sections and wash green beans and mushrooms.
  • Next, peel and cut lotus root into slices then, crush it using a knife
  • Peel and cut carrots into slices.
  • Wash the dried dates.
  • Then, put the pork bones into a big pot when the water is cool on high heat. After boiling, turn it to slow heat for about 5 minutes. Pour off all the water and wash the pork bones.
  • Lastly, pour 4500ml of water into the pot. Once the water boils, put all the ingredients into the pot and boil for another 15 minutes on high heat. Then, turn on slow heat for about one and half an hour. Serve.
