Fresh Snow Fungus with Broccoli 新鮮雪耳伴西蘭花(花開富貴 )

Ingredients
  

  • 365 g broccoli
  • 120 g fresh snow fungus
  • 28 g goji berries
  • ½ red dates
  • 412 ml chicken broth 1 can
  • 1 tbsp oyster sauce
  • 10 g ginger

Instructions
 

  • Wash fresh snow fungus with hot water. When the snow fungus becomes soft, cut and remove the hard portion in the middle then slice the rest into small portions.
  • Cut the broccoli into small portions. Immerse them with salt water for about 15 minutes then wash again.
  • Wash goji berries.
  • Boil ginger, oyster, chicken broth and one cup of water together on high heat.
  • Put the snow fungus in after boiling. Turn to medium heat for about 5 minutes and then put in the snow fungus on the dish.
  • Add the broccoli into the soup for about one minute and put them aside. Then add goji berries and red dates into soup for about 10 seconds. Place them in the middle.
  • The rest of the soup is poured onto the broccoli for better flavours

Notes

1.Freezing the fresh snow fungus will be kept longer. Washing them in hot water will eliminate the frozen smell.
2. We have to add fresh snow fungus, broccoli, goji berries and red date in the same soup in sequence otherwise the color of snow fungus will be different.
