Buckwheat Noodle with Arctic Surf Clam (蕎麥麵伴北極貝)

Ingredients
  

  • 3 bundle of buckwheat noodle
  • 400 g arctic surf clams
  • 150 g smoked salmon
  • 1/2 cup noodle soup base
  • 2 eggs
  • 28 g fresh chives
  • 1/2 of lemon
  • Marinade for arctic surf clam:
  • 1 tsp lemon skin
  • 1 tsp lemon juice
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • ½ tsp sugar
  • 5 g chives
  • Marinade for buckwheat noodle
  • ½ cup of noodle soup base
  • 1 cup boiled water in room temperature
  • 1 tsp wasabi
  • 10 g grinded ginger

Instructions
 

  • Cut each arctic surf clam into half and remove all the dirt. Wash them thoroughly.
  • Cut the fresh chives into pieces.
  • Cut the smoked salmon into strips.
  • Cut the egg into strips after frying the egg.
  • Prepare 4 liters of ice water (boiled)
  • Add about 3 liters of water into the pot on high heat. After boiling, add 1 tsp of oil and 3 bundles of buckwheat noodles and turn to low heat. Separate the noodles with chopsticks and boil for about 6 minutes or until the noodles become soft. Strain away the hot water and put all the noodles into ice water. Once cooled, drain out all the water and let them dry.
  • When you eat, add noodles, smoked salmon, egg, fresh chives and arctic surf clam with marinade of noodles.

Notes

1.Prepare the arctic surf clam one day before you eat. It will be more tasty.
2.Add the marinade of noodles when you eat. If you add it early, the noodle will become swollen to affect the taste.
