Cut each arctic surf clam into half and remove all the dirt. Wash them thoroughly.
Cut the fresh chives into pieces.
Cut the smoked salmon into strips.
Cut the egg into strips after frying the egg.
Prepare 4 liters of ice water (boiled)
Add about 3 liters of water into the pot on high heat. After boiling, add 1 tsp of oil and 3 bundles of buckwheat noodles and turn to low heat. Separate the noodles with chopsticks and boil for about 6 minutes or until the noodles become soft. Strain away the hot water and put all the noodles into ice water. Once cooled, drain out all the water and let them dry.
When you eat, add noodles, smoked salmon, egg, fresh chives and arctic surf clam with marinade of noodles.
