Black Bean Chicken ( 豆豉雞 )

Ingredients
  

  • 6 pcs chicken thigh
  • 2 tbsp black bean
  • 2 cloves of garlic
  • 1 big shallot
  • ½ onion
  • 1 green onion
  • 2 or 3 slices of ginger

Marinade Sauce

  • ½ tsp oyster sauce
  • tsp dark soy sauce
  • ½ tsp sugar
  • ½ tsp soy sauce
  • ½ tsp pepper
  • 1 tbsp cooking wine

Instructions
 

  • Pluck the remaining hairs on the chicken thighs and wash. After washing, dry it up and cut them into 3 pcs each. Marinade them for about 4 hours.
  • Slice the ginger, garlic and shallot ( cut it into thicker slices). Cut the green onion into 1 inch pieces
  • Wash the black beans and dry them. Use a spoon to crush the black beans.
  • Put ½ tbsp of oil and fry with onion and shallot on low heat until you can smell the flavours. Take them out and put them aside.
  • Using the same wok, put ½ tbsp of oil and fry with ginger and garlic until the flavours come out. Fry both sides of chicken thigh until golden brown then put the black bean
  • Lastly, put in the previously fried ginger, garlic, onion, green onion and shallot and mix them evenly. Put the lid on for about 1 minutes.
  • Serve.

Notes

  1. Crush the black beans to get the maximum flavours out of it
  2. When frying the chicken , fry the chicken skin side first for a tastier dish!
