Artichoke with Mango Cream cheese ( 雅枝竹配芒果忌廉芝士醬 )

Ingredients
  

  • 4 extra large artichoke
  • 1 lemon
  • 1 mango
  • 100 ml milk
  • 1 tbsp plain yogurt
  • 100 g cream cheese

Instructions
 

  • Take away outer layer leaves of artichoke. (This can be used for the soup later on)
  • Prepare one pot of room temperature water. Cut the lemon into half and squeeze all the juice in the water , cut into small pieces and put it into the water
  • Cut each artichoke in half and remove/clean inside.
  • Prepare a dedicated steam pot and boiling water.
  • Put all the artichoke in the steam pot and steam for about 20 minutes.
  • Use the chopsticks to check whether they are soft or not.
  • And then let them cool at room temperature.
  • Peel off the skin and take away the core of the mango.
  • Add mango pieces , milk, yogurt and cream cheese into the blender. And blend them into sauce.
  • Put the sauce inside each cooling artichoke.
  • You can put them in the fridge. It's better to serve them cold.

Notes

  1. After cutting artichoke, put them into lemon water immediately to avoid oxidation.
