Preserved Eggs with Tofu Cold Dish Recipe( 涼拌皮蛋豆腐 )

Preserved egg and tofu side dish is your next refreshing side dish, made with simple ingredients.

Unlike Korean culture, Hong Kong culture doesn’t really have that many traditional side dishes. In Korean culture, it is always very satisfying knowing that aside from your main dish you can simply have a full meal with rice and the side dishes given.  I’m a sucker for side dishes so when my mom introduced this cold dish to me , I was so excited. This is so simple, so delicious and so refreshing.

WHAT ARE PRESERVED EGGS?

Preserved eggs are special eggs that are preserved using different ingredients that causes the white part of the egg to turn black and the yolk to turn dark green. I’m not going to explain how to make these eggs or what the ingredients are because frankly I have no idea and I don’t want to act like I’m an expert in this area if I’m not. 

However, preserved eggs are great when served with foods that are more bland like congee. Preserved eggs and meat congee is my favourite ! Maybe I should ask my mom if she knows how to make it. 

INGREDIENTS

  • 454g tofu
  • 3  preserved eggs
  • ¼ of an orange pepper
  • 1 green onion
  • 2 tbsp sesame oil
  • ½  tsp sugar
  • 2 tbsp black bean soy sauce
  • ½ tsp vinegar

INSTRUCTIONS

  1. First, place tofu upside down on the dish. Boil 6 to 8 cups of boiling water to pour on the tofu for about 4 to 5 times.
  2. Next, peel off each preserved egg and cut it into 8 pieces per egg
  3. Cut the green onion and orange pepper into pieces. 
  4. Mix soy sauce, sugar and vinegar together.
  5. Then, put half of the onion in the bowl. Heat up the sesame oil and pour it on the  green onion. And then mix up all the sauce with orange pepper. Let them cool down.
  6. Lastly, put tofu in the center of the dish and place the preserved eggs around it. Pour all the sauce on the tofu and the preserved egg and sprinkle the rest of the green onions on top. Keep it in the fridge for at least 1 hour. 
  7. Serve.

TIPS

  • By pouring boiling sesame oil on green onion, this will increase the green onion taste exponentially.

Ingredients
  

  • 454 g tofu

  • 1 green onion
  • 2 tbsp sesame oil
  • ½ tsp sugar
  • 2 tbsp black bean soy sauce
  • ½ tsp vinegar

Instructions

  • Lastly, put tofu in the center of the dish and place the preserved eggs around it. Pour all the sauce on the tofu and the preserved egg and sprinkle the rest of the green onions on top. Keep it in the fridge for at least 1 hour.
  • Serve.

Notes
