If you live in an asian household, I guarantee you will have eaten some sort of brine marinade food usually consist of boiled eggs and meats. If not, here I am to let you know you are missing out my friend! Today we have a pork tongue recipe !
LUCKY MEANING “大吉大利”
Another play on words for this dish.”脷” and “利” both are pronounced as “lei” in cantonese. ( one means tongue and one means smooth) As for “大吉大利” this lucky phrase wishes you and everything in your life to go your way. The idea that everything that you experience will be smooth sailing. Boiled eggs on the sides resemble an ingot for plating purposes.
INGREDIENTS:
- 3 pork tongues
- 4 eggs
- 15 g ginger
- 2 tbsp cooking wine
SAUCE INGREDIENTS
- 10 pcs of cloves
- 2 bay leaves
- 3 star anise
- 1 tangerine skin
- 2 cloves of garlic
- 10g ginger
- 1 cup soy sauce
- 1 tbsp dark soy sauce
- 5 cups water
- 15g rock sugar
- 2 tbsp cooking wine
- 1 cinnamon stick
INSTRUCTIONS:
First, boil eggs. After, peel off the egg’s shell.
Next, wash pork tongue. Add ginger slices, cooking wine and pork tongue into boiling water in the pot for about 20 to 25 minutes on low heat. Then pour off the water and scrap off the outer skin of the pork tongue and wash it again.
Pour all the marinade sauce into the pot and boil them with high heat. After it boils, add pork tongue into the pot and boil for about 45 minutes on low heat. Then put the cooked egg inside and boil for about 5 minutes. Then turn off the heat and cut the egg in half and pork tongue into slices. Serve.
TIPS:
- This can be served with mustard.
- After cooking, you can put pork tongue and egg into marinade sauce overnight for a stronger taste.
- You can drain out the ingredients from marinade sauce after cooking and put in the refrigerator to reuse.
