I know what you are thinking … octopus in soup ? YES. Super healthy and super delicious ! Octopus lotus root soup is the best way to ring in the new year.
INGREDIENTS:
- 603g lotus root
- 80g dried octopus
- 3 dried dates
- 80g green beans
- 6 mushrooms
- 2 carrots
- 1.62 kg pork bones
- 4.5L water
LUCKY MEANING “蓮藕章魚湯….年年好運有”
As you may know by now most dishes really wishes you either good luck, wealth or happiness. Lotus root also known as “蓮藕” sounds like “年年”. “年年” means every year and “好運有” means lucky. This dish like many others wishes you good luck every year. This dish is also very healthy so give it a try.
INSTRUCTIONS:
First, soak green beans, mushrooms and dried octopus until they become soft.
After soaking, cut dried octopus into sections and wash green beans and mushrooms.
Next, peel and cut lotus root into slices then, crush it using a knife for the flavours to come out.
Peel and cut carrots into slices. Wash the dried dates.
Then, put the pork bones into a big pot when the water is cool on high heat. After boiling, turn it to slow heat for about 5 minutes. Pour off all the water and wash the pork bones.
Lastly, pour 4500ml of water into the pot. Once the water boils, put all the ingredients into the pot and boil for another 15 minutes on high heat. Then, turn on slow heat for about one and half an hour. Serve
