Japchae Recipe – Sweet Potato Noodles ( 雜菜炒薯粉 )

The minute quarantine hit in 2020 , I became obsessed with korean food, making korean dishes ,but I have one problem …I’m not korean. No, I don’t mean have to be korean to make korean food ,but I just don’t have the genes in me to stand the spicy levels of korean food. Unfortunately, I’m still obsessed.

Guess what I did? I asked my mom to make our own version. If you want an easy , less spicy japchae noodles , keep reading !

INGREDIENTS

  •  207g of glass noodles
  • 1 carrot
  • 1 onion
  • 1 broccoli 
  • 1 tablespoon of ssamjang
  • 1 tablespoon of fish sauce
  • 2 tablespoon of sesame oil
  • 1 tablespoon of sesame seeds
  • 4-6 shiitake cooked mushrooms
  • 1 tablespoon of dark soy sauce (optional)

INSTRUCTIONS

First, cut onions, carrots and mushrooms into strips. Cut broccoli into smaller pieces.

Add oil into a pan and fry all ingredients for approximately one minute. Tip : Fry onions first and broccoli last.

Follow the instructions on the glass noodle packaging. In general, boil noodles until soften or until preferred texture.

Next, use tap water to rinse. Drain. Add sesame oil into the noodles to ensure noodles don’t stick together when frying.

In a wok on medium heat, add sesame oil and ssamjang to allow the flavours to come out. Then, mix in noodles.  Add fish sauce and sesame seeds into the mixture.

Lastly , mix in the cooked onions, carrots , mushrooms into the wok. Do a taste test. Add salt to your liking.

EVA’S WOK TIPS

  • Add 1 tablespoon of dark soy sauce at the end for a darker appearance and a saltier taste.
