In asian cultures, beef tongue is a popular ingredient used in stews and stir fry. Yes, it might look not as appealing but this is an important step for tasty future beef tongue recipes (including the upcoming recipe)! The good thing is that the preparation isn’t hard just a little tedious.

INGREDIENTS
You will need:
- 2.5 lbs of beef tongue
- 5 pcs star anise
- 18 ginger with skin
- 1 tbsp black pepper
- 2 tbsp cooked wine
- 1 pc red hot pepper
- 2 cloves of garlic with skin
- 1 pc cinnamon stick
- Cloves
WHAT IS STAR ANISE?
If you are not familiar with asian cuisine, star anise might not be familiar spice to you. Star anise is a culinary spice where the oil and seeds are used for different purposes. It comes from a plant called Illicium verum from Vietnam and China. They come in powder form and as a whole. For this recipe, we suggest using the whole star anise. We bought our star anise at the local supermarket, but they come in all sorts of packaging including bags and glass jars. You can find them here if you can’t find them at a local supermarket.
INSTRUCTIONS
- Wash beef tongue thoroughly.
- Put all the spices in cold water and boil them at high heat for about 20 min. Turn on medium high heat, and boil until you get a whiff of the different spice scents.
- Turn on the high heat to put the beef tongue and cooked wine into the boiling water and make sure to submerge the beef tongue completely.
After boiling, turn to low heat and boil for one and half an hour.
Use the hand to remove the outer layer (white) of the beef tongue. Make sure it is still hot so, it will be easier to remove it. Make sure to use tongs to help yourself out or else it will be very hot ! Then, rinse it in boiled water. Cut into slices. If you want to serve it right away, I recommend dipping it in chilli oil. Prep Beef Tongue (about 2.5 lb) Recipe ( 怎樣處理牛脷 )
Ingredients
- 2.5 lb beef Tongue

- 1 red hot pepper
- 2 cloves of garlic with skin
- 1 cinnamon stick
- cloves
Instructions
- Wash beef tongue thoroughly.
- Put all the spices in cold water and boil them at high heat for about 20 min. Turn on medium high heat, and boil until you get a whiff of the different spice scents.
- Turn on the high heat to put the beef tongue and cooked wine into the boiling water and make sure to submerge the beef tongue completely.
- After boiling, turn to low heat and boil for one and half an hour.
- Use the hand to take away the outer layer (white ) of the beef tongue and wash it again.
- If you want to eat beef tongue cold, then wash with warm water and then immerse it with hot pepper oil.
- For Korean Barbecue, cut it into pieces. Or eat with hot pepper oil, or cooked with other materials.
