This is definitely a dinner recipe where you get to impress your family and friends! You will need :
INGREDIENTS
- 2 bags (600g) Norway Mackerel
- 540g asparagus
- 2 sticks red carrots
- ½ a lemon
- 4 cloves garlic
- 1 tbsp Steam fish soy sauce (seasoned soy sauce)
- 2 tbsp Mirin
PREPARE MACKEREL
First, we have to wash the mackerel thoroughly. Use a knife to take away the black membrane inside. Use the paper towel to dry it. In order for the sauce to sink into the mackerel, make three cuts on top using a knife
COOKING VEGGIES
First, cut the end of asparagus and rinse thoroughly. After peeling off the skin of the carrot, cut the carrots longitude style. Next, cut both lemon and garlic into pieces.
Put asparagus and carrots in the oven plate and drizzle 1 tbsp oil , black pepper and salt evenly
Turn on the oven 350 degrees (Celcius), cook for 20-25 min.
WHAT IS MIRIN?
If you don’t have this in your household, you are missing out. The minute I found out why some my mom’s dishes tasted better than others is simply because of this Mirin. Mirin is a type of japanese cooking rice wine that add a sweet and tangy taste to it. It also creates a more sticky texture to food which is why I love it on spare ribs and grilled fish. We personally like to use the Mitsukan brand, however which ever one you can get your hands on works as well.
GRILLED MACKEREL
- Pour 1 tbsp oil in a pan. Put the garlic in.
- Turn on slow heat until the garlic aroma flavours come out. Put aside the garlic
- Turn to medium heat and put the mackerel onto wok.
- Sprinkle black pepper, fry both sides of the fish and add lemon.
- When the mackerel is golden brown, then add soy sauce, mirin and garlic.
- Turn off the heat and place the fish on the plate.
- Lastly, pour all the sauce from the wok on the fish.
TIPS & TRICKS
- Frying the fish will cause excess oil therefore, you can pour off some oil during that time.
- Using Mirin will cause your food to burn easily. Please turn off the heat after putting in the Mirin.
- Mackerel fish has its own taste. Using steam fish soy sauce will enhance the flavours of the actual fish rather than relying on the soy sauce. Of course you are welcome to use regular soy sauce.
