Artichoke with Mango Cream Cheese Recipe (雅枝竹配芒果忌廉芝士醬)

You know those random innovative recipes you see online ? The ones where you make a face ..? You know what I’m talking about. If not , well here is one recipe for you ! My mom decided to be new and innovative and oddly… It worked out ! I felt like I was a kid playing with my food again. PLUS… it’s considerably healthy ! Artichoke leaves dipped with mango cream cheese !

WHAT ARE ARTICHOKES?

Without my mom’s expertise from watching the Food Network or roaming all the local supermarkets , I would have never known what artichokes are. They’re shaped like a “flower bulb” if you will. There’s not much to it …in fact there’s not much to eat, but the few bites will leave you wanting more. 

On a personal note, my mom used to just steam these when I was a kid and give me one leaf at time to eat. Why? Well, this basically distracts me for half a day so she could focus on housework. So… a good tip for new moms out there I guess?

Anyways, this recipe is perfect for your mundane days… days where things seem a little too ordinary. BAM ! Place this on the dinner table and your entire family will be filled with curiosity. 

INGREDIENTS

  • 4 extra large artichokes
  • 1  lemon
  • 1 mango
  • 100 ml milk
  • 1 tbsp of plain yogurt
  • 100g cream cheese

INSTRUCTIONS

First, take away the outer layer leaves of the artichoke. (This can be used for the soup later on)

Next, prepare one pot of room temperature water. Cut the lemon in half and squeeze all the juice in the water , then cut into small pieces and put it into the water.

Cut each artichoke in half and remove/clean the insides until it looks like the picture below. Prepare a dedicated steam pot and boiling water.

Put all the artichoke in the steam pot and steam for about 20 minutes. Use the chopsticks to check whether they are soft or not.

And then let them cool at room temperature.

Peel off the skin and take away the core of the mango. 

Add mango pieces , milk, yogurt and cream cheese into the blender. And blend them into sauce.

Put the sauce inside each cooling artichoke. 

You can put them in the fridge. It is better if you serve them in the cold.

TIPS

After cutting the artichokes, put them into lemon water immediately to avoid oxidation. This is a great alternative to a salad on the side at the dinner table !
