Soy Sauce Noodles Recipe (Chow Mein) (豉油王炒麵)

Another classic Chinese dish…. Soy Sauce Noodles ! We love our vegetarian dishes in our household even though we are not vegetarian. This is perfect for meal prep days for delicious lunches of the week 🙂 We are all about simplicity and delicious meals here ! Hope you like it !

INGREDIENTS

  • 454g Cantonese style steamed noodles
  • 280g yellow chives
  • 150g garlic stems
  • 1 onion 
  • 5 dried mushrooms
  • 588g sprouts
  • 3 tbsp dark soy sauce
  • 2 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp veggie oyster sauce
  • 2 tbsp sesame oil

INSTRUCTIONS

First, boil water in a pot and turn off the heat. Then, put noodles into the pot. Wash and untangle the noodles. Pour out the water and let the noodles dry out.

Soak the mushrooms for about half an hour and wash.  (please see the cleaning method for “Dried Oyster with Vegetable Recipe”). Then cut away the mushroom stems. Cut them into strips. Put the mushrooms into one cup of cold water and boil for about 10 minutes with low heat. Then turn off the heat and let the rest for 10 minutes with a lid.

Peel off the onion and cut into the strips.

Wash the yellow chives and garlic stems. Cut them into bite size.

Wash the sprouts.

Put 2 tbsp of oil into the wok on medium heat. Throw in the mushrooms, onions, and garlic stems. Turn to high heat, put the sprouts and yellow chives for about 30 seconds. Set aside.

On no heat,  put the noodles, dark soy sauce, soy sauce, sugar, oyster sauces and 2 tbsp of sesame oil and stir them evenly. Then, turn on the medium heat to fry them evenly. For about 1 minute, put all the ingredients and fry them evenly. Taste to test saltiness

Serve with chili sauce.

TIPS:

  1. Mixing all the sauces with the noodles evenly before turning on the heat will make the frying process easier.
