Watercress & Sea Bass Soup Recipe (西洋菜鱸魚湯)

INGREDIENTS:

  • 700g watercress
  • 1 live sea bass (2 lb)
  • 30g goji berry
  • 15g ginger
  • ¼ tsp salt
  • 2 ½  liters of hot water

INSTRUCTIONS:

Add water in the pot. Put 3 tbsp of salt and the watercress into it. Immerse them for about 15 minutes.

Remove the scale of the fish and all the organs of the fish. Cut the fin and pat dry it thoroughly.

Cut off the head of the fish and cut them into half.

Cut the fish along the backbone and cut them into 3 portions. Cut the fish bone into small pieces. Divide the fish meat into two portions. Cut one portion into small pieces and another into slices.

Wash and flatten the ginger with a knife. Cut it into pieces.

Rinse the goji berry.

Fry fish head, fish bone, ginger, ¼ tsp salt and 2 tbsp of oil on medium heat. Crush them all into pieces.

Add 2 ½  liters of hot water and turn to high heat. Put the fish bones and head into and boil for about 20 minutes. Separate the residue with fish soup twice.

Boil the fish soup again on high heat and add the watercress for 10 minutes.

Turn to medium heat and add goji berries.

Put the fish slices on the top and add some green onions. Put the lid on for about 1 minute.

After fish soup is boiled, serve when the fish meat is cooked.

Serve with garlic and soy sauce.

Notes

1. Since sea bass is live fish, we want to preserve the fresh taste of fish. Make sure to serve it with garlic and soy sauce if you don’t love
2. After frying fish head and bones, we need to use the boiling water to boil. (Reference : Chinese Okra and Fish Soup Recipe)
3. The watercress is immersed with salt water to easily remove the insects inside
