This is a dish I call “use whatever is necessary” . Why? This dish requires you to use the right ingredients that will help absorb all the good flavours and juices. Tofu puffs are key. This is such a simple dinner recipe to add to your list.
INGREDIENTS:
- 12 tofu puffs
- 565g pork meat (梅頭肉)
- 100g vermicelli
- 2 tbsp shrimp paste
- 1 tsp sugar
- 1 tbsp cooking wine
- 1 tsp sesame oil
- 1 tsp soy sauce
- 1 green onion
- 1 chili pepper
- 3 slices ginger
- 4 cloves of garlic
INSTRUCTIONS:
Wash the pork and cut into thin slices. Mix the pork with shrimp paste, sugar, cooking wine, sesame oil, soy sauce and 2 tbsp of water evenly. Marinade them for about 15 minutes.
Wash the tofu puffs with hot water to remove the excess oil from the surface. Squeeze the water from the puffs completely and cut in half for each puff.
Cut the vermicelli in portions after washing and immerse them in water until soft
Use 2 tbsp oil to fry the minced garlic with a bit of salt on low heat until it turns golden. Put it aside.
Cut chili pepper and green onion into the pieces.
Wash ginger and cut into strips.
Stir fried garlic and vermicelli evenly and add 3 tbsp of water. Put them on the bottom of the dish.
Place tofu puffs on top
Then put the slices of pork meat, ginger and chili.
Steam them for about 15 minutes until pork meat is cooked.
After steaming, sprinkle green onion evenly and serve.
TIPS
- Fried garlic and mixed up with vermicelli first in order to let the vermicelli absorb the garlic taste.
- Don’t cut pork into thick slices to allow it to cook more easily.
