INGREDIENTS:
- 18 mushrooms
- 18 dried oysters
- 38g nostoc flagelliforme (“fat choy”)
- 520g lettuce
- 18g brown sugar
- 2 tbsp oyster sauce
- 2 cloves of garlic
- 1 tbsp oil
- 2 tbsp cooking wine
- 2 slices ginger (cut it into strips)
LUCKY MEANING “發財好事”
“發財” means “get rich”. This is another play on words. “發財” sounds similar to “髮菜” which is the nostoc flagelliforme used in this recipe. “蠔豉” means dried oysters which sounds similar to “好事”. This refers to good things will come your way.
INSTRUCTIONS:
First, slightly wash the mushrooms and submerge them in water until they become soft. Make sure the water covers all the mushrooms. After, keep the water for future use . Then cut away the top of the mushrooms and wash with cornstarch for each mushroom. Wash them again with water.
Next, submerge dried oysters in water for about 5 minutes, rinse to remove the sand inside. Put ginger, cooking wine and a cup of water in the bowl. Heat it up in the microwave for 8 minutes and then take away the ginger. Place water aside.
Then, mix up water from mushrooms and dried oysters.
Submerge the nostoc flagelliforme in water and oil for about half an hour. Then rinse and drain.
Wash lettuce and cut garlic into slices.
Put the mushrooms and dried oyster into the half of mixed water (water is used to submerge the mushroom and dried oysters ) and steam for about an hour.
Put 2 tbsp of oil into the wok and fry the garlic with medium heat. Then, put mushrooms, dried oysters, oyster sauce, brown sugar and a cup of mixed water. After boiling, add nostoc flagelliforme evenly and put the lid on for about 15 minutes.
Put the cooked lettuce first in the dish. Then add the mushrooms, nostoc flagelliforme and cooked broccoli on the side.
TIPS
- There might be sand in the water from washing mushrooms and dried oysters. Don’t use the water at the bottom when reusing it
- Do a taste test first before adding salt because the dried oyster and oyster sauce are already salty.
