Here comes the party food recipes for the summer ! Corned Beef and Potato Pancakes! Yes, I admit these are a little big for bit size party food ,but that’s the best part about this recipe!. You can make it into any shape/size you want to fit the needs for your party. Hope you like it !

Corned Beef & Potato Pancakes Party Food

INGREDIENTS:

  • 340g(1 can) corned beef
  • 2 potatoes (825g)
  • 2 tbsp cornstarch
  • 1 (200g) onion 
  • 1 egg
Corned Beef & Potato Pancakes Ingredients

INSTRUCTIONS:

First, peel off the skin of the potatoes and cut them into pieces. Steam the potatoes for about 20 minutes until they become soft. Press them into mashed potatoes.

Peel off the skin of the onion and cut them into pieces. Put 1 tbsp of oil and fry the onion for about 1 minute on low heat until it becomes soft.

Corned Beef & Potato Pancakes Mixture

Crush the corn beef.

Mix up mashed potatoes , onion, corned beef, egg and cornstarch evenly.

Divide the mixtures into the same portion and make them circular and press them flat.

Corned Beef & Potato Pancakes (Circular uncooked)

Add 2 tbsp into the wok. Fry both sides of the mixture on low heat until golden.

Serve with tomato sauce.

TIPS

  • Fry the mixtures (mashed potatoes) on low heat slowly to make them crispy on the outer surface.

  • Add 2 tbsp into the wok. Fry both sides of mixtures on low heat until golden color.
  • Serve with tomato sauce.
