This is one of the really traditional dishes that you really won’t understand or know of until you walk into a traditional asian household. Honestly, this is one of the dishes where you don’t even know what to eat first because there is just so much going on. I promise as usual it will be delicious. I present to you Rainbow Fortune Noodles also known as “Lo Hei “
LUCKY MEANING “撈起”
Why do we call it “Rainbow Fortune Noodles” ? Well, look at it ..it’s colourful. Second, the dish is designed so, as a family you can mix it together to represent all the good things and luck will come your way. Like an “explosive empowering energy” that will help you ring in the new year.
INGREDIENTS
- 138g smoked salmon
- 160g ham
- 3 eggs
- 225g beet
- 100g sugar snap
- 2 green onions
- 1 tbsp sesame
- 412ml chicken broth
- 300g rice noodles
- 150g crab stick
- 80g carrots
- 8 abalones including sauce from can (ready to eat)
- 250g jellyfish (ready to eat)
INSTRUCTIONS
- First, wash the beet and place it on aluminum foil. Add a bit of oil and salt. Wrap it up and put it in the oven for about 30 minutes at 400 degrees celsius.
- Cut smoked salmon, ham, crab sticks and beets into strips.
- Next, stir well after taking away all the egg shells. Fry eggs and cut them into strips.
- Wash sugar snap. Tear away old fibers from sugar snap for both sides. Boil them for about one minute and cut them into half.
- Peel off the carrots and cut them into strips.
- Wash green onions and cut them into strips. Put them into ice water for about 10 minutes. Then dry them up. Add 1 tsp of sesame oil ,1 tsp mirin and stir well in a bowl. Add a bit of sesame on it.
- Stir the jellyfish well with marinade sauce ingredients which come with the package.
- Boil the abalones with the sauce after opening. Then separate the sauce and abalones.
- Submerge rice noodles in water until it becomes soft. Mix 2 cups of water with chicken broth and boil. Then add the rice noodles in a pot on medium heat and boil them until it becomes soft. Turn off the heat and place at the bottom of the dish.
- Put all the ingredients on top of the rice noodles according to your interest.
- Add the abalones sauce on the top and stir well when you eat.
TIPS:
- Mix the beetroot and the rice noodles first to make the rice noodles become red.
- To avoid your hands from turning red, wear gloves when handling the beetroot.
