I know what you are thinking…bitter melon? Why would you want something like that? I am here to tell you that you can make bitter melon taste good. You just need the right ingredients. Not to mention it is also very healthy for you.
INGREDIENTS:
- 200g soybean
- 592g bitter melon
- 1383g pork back rib
- 20g ginger
- 600g pickled sour mustard
- 1 clove of garlic
- 3 liters water
INSTRUCTIONS:
Wash the soybean and immerse them into the water (water has to cover the surface of the soybean). Then, put them in the fridge for one night.
Separate the pickled sour mustard into slices then immerse them into the water for about half an hour. Rinse again. Cut them into big slices and pan fry them in the wok without using oil.
Wash bitter melon and cut both ends. Cut them half longitudinally and remove the core. Cut them into big slices. Wash, flatten and cut the ginger into slices.
Peel off and flatten the garlic. Put the ribs and water in the pot on medium heat. Drain after boiling for about one minute. Wash the ribs again.
Boil 3 liters of water in the pot with high heat. When it boils, add the ribs, soybeans (& water), the ginger and garlic into the pot. Then change to low heat for about 30 minutes.
Add bitter melon, pickled sour mustard and boil them for about 30 minutes. Taste test before adding more salt.
TIPS
- After washing the soybean, let it sit in water for one night. It will help the soften soybeans and enhance the flavours when boiling
- The pickled sour mustard has to be immersed into the water and dried them up in the wok. It will reduce the salt content.
